[Vcil Members' Talks #4] Food Education in a World of Multiple Crises

On the evening of December 25th, 2025, the sharing session VCIL MEMBERS' TALKS #4: FOOD EDUCATION - UNDERSTANDING AND CREATING A WORLD OF WELL-BEING AND REGENERATION THROUGH WHAT WE EAT took place with our guest speaker Loto, a member of the Vcil Community - a "taste philosopher," founder of the Food Vision Global Network, author of books on Gastronomy, and team coach at the alternative university Mondragon Team Academy (MTA) in Seoul. The conversation focused on the important theme of how food connects us to health, culture, sustainability, and social justice.

Why Food Education Matters

Loto began by explaining why food education is crucial in our complex world. Food is not just about nutrition; it's about culture, environment, economy, and ethics. How we grow, distribute, and consume food has profound impacts on our health, communities, and planet.

Understanding Food Systems

The discussion explored how industrial food systems have disconnected us from the origins of our food. Many people don't know where their food comes from or how it's produced. This disconnection has led to environmental degradation, health problems, and social inequality. Food education aims to reconnect people with their food sources and help them make conscious, ethical choices.

Taste as a Philosophy

As a "taste philosopher," Loto shared how taste is not just a sensory experience but a window into culture, biology, and ethics. Learning to taste consciously - to appreciate flavors, textures, and the stories behind food - is a form of education that engages all our senses and deeper understanding.

Creating a Regenerative Food Culture

The session emphasized the importance of creating food systems that regenerate rather than deplete. This includes supporting local farmers, promoting traditional agricultural methods like those we learned about in Tar village, and building food cultures based on respect for nature and community well-being.

Loto's work with the Food Vision Global Network focuses on creating a food culture that is:

  • Healthy for people
  • Beneficial for the environment
  • Fair and ethical
  • Culturally rich and diverse
  • Economically sustainable for farmers and food producers
